Sushi First Time!


First time making sushi and the results were amazingly gooodddd~ XD

I learned the recipe from the internet and it was actually very simple and easy..


Sushi Rice:
3 cups Japanese (sushi) rice
4 cups water (1 cup rice=1.3 cup water)
- cook the rice in rice cooker like you normally cook your rice.

+

1/2 cup rice vinegar (I used lemon juice instead)
1/2 cup sugar
pinch of salt
- simmer all of the ingredients until the sugar is fully dissolved 
- let it cool before adding to the still hot cooked rice (above)
- mix well
- let the rice cool a bit before making the sushi

 Other ingredients: Seaweed sheets, carrot & cucumber

Variant 1



 Mayo shrimps

peeled & cooked shrimps (I just boiled them in water)
6 tbsp mayonnaise
1 tbsp tomato sauce

- mix all of the ingredients together

Variant 2


 Black Pepper Snails

Cooked snails (boil them in water.. again)
1 tbsp Course black pepper
3 tbsp Soy sauce
2 tbsp Oyster sauce
1 tbsp Butter

- melt butter in pan
- fry black pepper for a while until aromatic
- add soy sauce & oyster sauce
- add snails

Variant 3



 Tamago (Egg)
3 eggs
3 tsp sugar
3 tsp light soy sauce

- mix all ingredients in a bowl
- add a little oil in a pan
- pour the egg batter thinly
- when cooked, roll the egg

Variant 4


 

Salmon
*we used frozen salmon, so we prefer to cook it first instead of eating it raw*
Sliced salmon fillet
Pinch of salt
Black pepper

- season the salmon with salt & pepper
 - pan fry the fillet until cooked

Seafood Pie


Seafood pie / Pai Makanan Laut


For Butter Sauce:

- 3 cloves garlic - finely chopped
- 2 tbsp butter
- 6 button mushroom - thinly sliced
- 1 can evaporated milk
- 2 tbsp curry powder
- curry leaves
- 1tsp chicken seasoning
- 5 cili padi - cut into two pieces

Melt the butter in a pan.
Saute the garlic until brown.
Add mushroom and fry for a little while.
Add 1 can of evaporated milk.
Let it simmer for 5 minutes.
Add curry powder and curry leaves.
Add chicken seasoning.
Add cili padi according to taste. Put more if you want it to be spicy.
Let it simmer for 10-15 minutes on a low heat.


For Filling:

- 2 fish fillets
- prawns
- 8 crabsticks
- 3 spring onion
- 1 carrot

Chopped the seafood into bit size.
Dice the carrot.
Slice the spring onion.


For Topping (mashed potato):

- 6 medium size potatoes
- 3 tbsp butter
- milk
- salt
- blackpepper
- mozzarella cheese

Boil the potatoes until soft and mash them in a bowl.
Add butter and milk until you reached the desired consistency.
Season with salt and pepper.


Arrange the filling at the bottom of the baking tray.
Pour in the butter sauce.
Finally, cover the filling with mashed potato.
On top of the mashed potato, add grated mozzarella cheese.
Bake in oven for 40 minutes at 170 degree Celcius.
Serve hot.

Iftar Bujang



8th Ramadhan


Iftar ni dah lama dah dulu.. Tapi baru teringat nak blogging sebab busy nak exam.. Tadi exam pun agak susah dan mencabar segala organ badan ni.. Seriauuu~

Ini merupakan iftar pertama kami di luar selain daripada Central Mosque and Sumsa. Bila dah dijemput oleh Alip and the gang, rasa excited pulak. Iftar ini berlangsung di rumah ustaz Asyraf di belakang library Strathclyde University. Jalan kaki 7 minit je dah sampai.


Sebelum bertolak, I dengan housemates prepare some dishes. Oleh sebab Alip kata dia nak masak nasi tomato, maka acar jelatah la companion dia kan. Alip prepare nasi & ayam masak merah, kami buat acar je. Senang je kot.


Resipi Acar Jelatah:

- timun
- lobak merah
- bawang besar
- nanas
- cili merah
- jus limau (menggantikan cuka)
- gula
- garam

1. Hiris sayur-sayuran menjadi batang mancis bersaiz gergasi. Bukan saiz batang mancis betul2, sebab kecil sangat.
2. Perah jus limau.
3. Tambah garam dan gula sebagai perisa.

Inilah hasilnya..

Mudah kan? Semudah ABC...

Iftar bujang ni disertai oleh pelajar2 bujang di Strathclyde/Glasgow seperti tuan rumah sementara (Rahimi, Alip, Faiz), Joe, H3 (Wanji, Duwe & I) dan Iqmal and the gang. So 10 orang camtulah..

Mula2, berbuka dengan kurma, donat dan air kosong dulu. Lepas solat Maghrib secara berjemaah, baru berbuka dengan makanan berat. Maka makanlah kami dengan girangnya. Tapi tak tau lauk mana yang pedas, sebab lidah semua stok rasa pedas2.. Ayam merah tak pedas.. I rasa acar jelatah yang pedas, sebab bubuh hirisan cili. Pastu, ada sirap bandung.. Layannn beb!



Masa dah selesai makan, Iqmal dengan rajinnya ke dapur untuk menyediakan milkshake oreo.. Dia dengan Alip. Rajin sungguh. Sedap jugak milkshake diorang..

Chef Alip di dapur - terlalu hebat sampai terblender sudu sekali.. melayang2 serpihan sudu ke udara..

Mr.Kipling.. Joe bawak.. Joe bawak macam2, donat lah.. turn over lah.. puff lah.. semua sedap! =)



Ok, ini saja cerita iftarku.. Dekat sini takde bazaar Ramadhan.. So takdelah gambar2 juadah yang dibeli dari bazaar..

Pasni nak tulis pasal iftar jam'i pulak, iaitu iftar besar-besaran anjuran Komuniti Malaysia Glasgow.

Brownies


For the iftar jam'i hosted by KMG last Saturday, my housemates and I baked brownies as our potluck dish.

Here is the recipe, it was simple and easy. We got the recipe from internet.. =)

Ingredients:

175g plain chocolate with 70 per cent cocoa
175g butter, room temperature and roughly cubed
85g self-raising flour
40g good-quality cocoa powder
1 tsp baking powder
1 tsp fine sea salt
5 medium eggs
300g unrefined organic caster sugar
1 tsp vanilla essence
115g walnut halves, roughly chopped (we used hazelnut instead)


Apparatuses:

Oven, metal bowl, spatula, baking tin, mixer, weighing scale, spoon & pot for boiling water.


Methods:
1. Preheat the oven to 180°C/350°F/gas mark 4. Break the chocolate into squares and put in a heatproof bowl with the butter. Melt over a pan of barely simmering water for five minutes. Make sure the base of the bowl does not touch the water. Take off the heat. It will still be lumpy at this stage, so stir immediately, until smooth. Leave until ready to use, but it should still be lukewarm and runny.



2. Sift the flour, cocoa powder, baking powder and salt twice into a bowl. Put to one side. Using either electric beaters (it will take around three minutes) or a hand whisk, whisk the eggs, sugar and vanilla essence together in a large mixing bowl, until thickened and mousse-like.




3. Stir the sifted flour and cocoa a quarter at a time into the egg mixture and stir with a wooden spoon, until well combined. Pour in the melted chocolate and stir thoroughly to mix – it should have a batter-like consistency. Finally, fold the roughly chopped walnuts evenly through the mixture.


4. Pour into the prepared tin and bake for 25 minutes. It should form a crust on top that is just starting to crack around the edges, and yet still be soft in the centre. Put the tin on a wire rack and leave to cool. Transfer the brownie and its paper to a board and cut into squares. To finish, you can also dust with either icing sugar or cocoa powder. The brownies will keep for up to a week in an airtight container.

Angah's Birthday



Ok.. Hari ini birthday Angah.. So, Happy Birthday to Angah! Semoga kaki cepat sembuh..

Prelude

Insiden petang tadi sangat menghanjeng diri. Seperti mana yg anda tahu, rumah I kat Vista Komanwel C tu terletak di tingkat 19. Lebih teruk lagi, daripada 3, hanya 1 lif sahaja yg boleh dipakai kerna lagi 2 lif tu rosak sebab water leak has affected the lift wiring very badly. Then, nak menyusahkan keadaan, time I nak balik Shah Alam, lif yg satu tu je pulak digunakan untuk memungut sampah dari tingkat ke tingkat. Masa I tunggu tu, lif tu kat tingkat 27.. then lepas 5 min tingkat 26.. then lepas 5 min lagi ke tingkat 25.. Hangin betul I. Dah la I tgh puasa, sabar jela. Then tiba2 tak boleh bersabar lagi, lalu dgn gigih dan cekalnya turun la dari tingkat 19 ke tingkat UG dengan menuruni tangga sambil mengendong 2 bijik beg; beg laptop dgn beg baju busuk. Cis!


Party Time

Setibanya di rumah setelah singgah di Tesco membeli bahan2 masakan, I pun terus mencoba resipi kejayaan Cahaya Wawa iaitu Sheperd Pie atau dalam Bahasa Melayunya ialah pai pengembala. Badd kata meruntun2 sedap Wawa buat, so I kena buktikan yang I juga mampu menbuatnya.

Pukul 3.30 start buat preparation; potong kentang, potong bawang & garlic sampai meleleh2 air mata suci I, potong wortel (carrot), dan juga potong daging kambing biri2 kepada bit size. Memang gigih, buat sorang2 pulak tu!

Okeh, ini resipi Sheperd Pie yang agak mudah difahami dan mampu dibuat oleh rakyat Malaysia tanpa menggunakan bahan2 yg pelik.



Sheperd Pie Wawa yg diolah oleh Iwa



Bahan2 Inti:

- daging kambing biri2/ayam/lembu/kambing kampung dipotong kpd bit size
- lobak merah dipotong dadu
- 2 biji bawang besar dipotong sukahati
- 5 ulas bawang putih dipotong, ditumbuk atau dibelasah
- sedikit daun bawang & daun sup untuk menghijaukan suasana

- butter untuk menumis
- sos BBQ Heinz
- kicap manis
- garam
- blackpepper
- sedikit tepung jagung yg dicampur dgn air

Bahan2 topping (mashed potato):

- kentang direbus empuk
- cream cheese Philadelphia, kalo tak mampu, Tatura sudeyhhh
- butter
- susu full cream (sbnrnye susu pape pun bleh)
- garam & blackpepper to taste

*kuantiti bahan2 sila anggar sendiri.. kalo nk buat byk, letak la byk2..


1. cairkan butter dalam kuali
2. tumis bawang besar & garlic sehingga naik bau
3. taburkan sedikit garam
4. masukkan daging sehingga masak
5. taburkan blackpepper
6. sedikit kicap manis utk gelapkan warna
7. tambahkan sos BBQ ikut suka hati banyaknya
8. bubuh tepung jagung yg telah dilarut dalam air utk pekatkan kuah
9. biarkan atas kuali hingga kuah menyejat dan agak2 kering sedikit
10. letakkan inti yg dah siap dimasak di dalam loyang pembakar

11. di dalam bekas lain, kentang yg telah empuk ditumbuk sehingga lumat
12. campurkan cheese, butter dan susu mengikut rasa kesedapan lidah anda
13. garam & blackpepper sbg penambah perisa

14. letakkan mashed potato ni ke atas inti tadi.. cover inti sepenuhnya ala2 pie gitu
15. bakar sehingga mashed potato menjadi keperang2an...

16. sedap utk dimakan begitu sahaja


Selain sheperd pie, dalam sambutan birthday kali ini, umi juga menyediakan laksa johor, mee rebus singapore, puding caramel dan cocktail buah2an. Kek prune coklat berkastard juga telah ditempah dari kawan umi.

Oreo Cupcakes

YEAH! Finally manage to make Oreo Cupcakes for the first. It's a trial actually, for Arissa's birthday this Sunday. I guess 'practice makes perfect' really applied here. lol...

Here is the recipe that I took from internet:

Oreo Cupcakes

Yields 30 cupcakes (yields 21 cupcakes only!)

For the cupcakes:
30 Oreos, 1 side twisted off and reserved for frosting *
2 cups sugar
1 3/4 cups all-purpose flour
3/4 cup HERSHEY’S Cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water

1. Heat oven to 350?F. Line muffin pans with paper liners and place 1 Oreo (cream side up) in each liner.
2. Stir together flour, cocoa, baking powder, baking soda and salt in medium bowl.
3. In a large bowl, combine sugar, eggs, milk, oil and vanilla. Stir until well blended.
4. Add flour mixture to large bowl and beat on medium speed of mixer 2 minutes.
5. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
6. Fill muffin cups 3/4 full with batter (about 1/4 cup).
7. Bake 22 to 25 minutes. Cool completely

For the frosting:
2 1-lb packages of confectioner’s sugar
1 cup vegetable shortening
1/2 cup warm water
2 tsp vanilla extract
1 cup Oreo crumbs, made from reserved sides (used above) and additional cookies

1. Beat shortening and water together.
2. Gradually beat in confectioner’s sugar and beat until creamy.
3. Add vanilla and beat in well.
4. If needed, add more water, 1 tbsp at a time, to attain desired consistency.
5. Beat in Oreo crumbs.
6. If frosting will not be used right away, store in an airtight container.

Optional Garnish:
15 Oreos, split in half and placed atop the frosted cupcakes

* You’ll probably need more than 1 bag for the cupcakes, frosting and garnish




For frosting, I used recipe from a recipe book. It's much more simpler...

125 g icing
60 g butter
flavours (vanilla essence and Oreo crumbs)

1. Beat the butter.
2. Gradually beat in icing sugar.
3. Add in flavours.
4. Pipe onto the cupcakes.

Of Coleslaw and Mashed Potato

Here are some of my favourite side dishes which I make whenever my family made western food for gathering.


Coleslaw

Bahan A (thinly sliced)
Cabbage
Carrot
Onion

Bahan B
Mayonnaise
Salt (a pinch)
Sugar (a lot!)

1. Mix Bahan A and Bahan B.
2. Tadaa, dah siap untuk dimakan.
3. Best served cold.

Mashed Potato

Potato (boiled until REALLY soft!, cucuk with fork to see whether it's soft or not)
Milk
Butter (a quarter block)
Salt
Pepper
Spring onion (finely chopped)

Mushroom gravy (instant)


1. Mash the potato
2. Add butter and milk
3. Add spring onions
4. Season with salt and pepper

Potato Salad

Potato (diced)
Tomato (diced)
Celery (roughly chopped)
Spring Onions
Mayonnaise
Salt (a pinch)
Sugar (ikut rasa)

1. Boil the diced potatoes
2. Mix the potatoes, tomatoes and spring onions
3. Add mayonnaise
4. Season with salt and sugar
